Avocado oil has a higher smoke point and is heart-healthy.

Cut 4 cloves of garlic.

Cut 1 red chili.

Cut 1/4 bunch of fresh parsley.

Add 1 tablespoon of salt to a large pot of boiling water.

Add 300g of spaghetti and follow package instructions for cooking.

In a cold pan, add 80ml of olive oil and the sliced garlic and chili.

Heat over medium-low, stirring occasionally, until the garlic is golden on the edges, being careful not to overcook.

Set aside 236ml of pasta cooking water.

Drain the spaghetti.

Add the drained spaghetti to the pan.

Mix in the reserved pasta cooking water.

Add salt and freshly ground black pepper to taste.

Add the chopped parsley.
