Start preparing the meat at 9:00 a.m. to serve at 6:00 p.m.
Remove the rind from the pork shoulder joint, leaving the fat cap on.
Use butcher twine to hold the pork shoulder together after trimming.
Season the pork shoulder with barbecue rub or a mix of salt, pepper, garlic granules, smoked paprika, and sugar.
Select beef short ribs with a consistent fat cap and marbling, scoring the membrane on the bottom.
Season the beef short ribs with an equal mix of salt, pepper, and garlic granules.
Cook the beef short ribs on the barbecue for about 6 hours at 120°C (approximately 250°F).
Check the internal temperature of the meat, aiming for 95°C (203°F).
Wrap the ribs in foil or a container to rest for at least 2 hours after cooking.
Prepare pit beans by frying diced onions in beef dripping until caramelized, then add baked beans and barbecue seasoning.
Add a small cup of water to the beans to prevent them from getting too thick.
Remove butcher's twine from the pulled pork and pull the pork apart using heat-proof gloves or forks.
Mix the pulled pork with the beans to create barbecue pulled pork pit beans.
