Peel the eggplant.
Slice the eggplant.
Slice the two medium onions.
Put the sliced eggplant and onions in a pot.
Add 1 tablespoon of salt and 1/4 cup of olive oil to the pot.
Add water to the pot.
Cover the pot and boil on medium to high heat.
After boiling, transfer the eggplant and onions to a food processor.
Add 2 tablespoons of dry cilantro to the food processor.
Add 1 cup of tahini to the food processor.
Add 2 tablespoons of lemon juice to the food processor.
Add salt to taste.
Add 1/2 teaspoon of cayenne pepper to the food processor.
Add 4 garlic cloves to the food processor.
Blend until creamy.
