Preheat the oven to 400°F.

Place the medium-sized eggplant directly on the oven rack and roast for about 1 hour.

After roasting, place the eggplant in a plastic bag and close it to steam for about 20 minutes.

Peel the eggplant skin off after it has cooled slightly, being careful not to let it sit for more than 15 minutes in the bag.

Scoop the insides of the eggplant into a bowl, discarding the top, and optionally chop it with a knife.

Add the juice of about 1.5 lemons to the eggplant in the bowl, reserving some lemon juice for later if needed.

Mash 2 garlic cloves with some salt and add to the bowl.

Add 1/2 cup of tahini to the mixture and mash everything together until combined. Use a mortar and pestle for a smoother texture if desired.

Transfer the mixture to a plate and spread it around in a circular motion.

Garnish with chopped parsley in the center and sprinkle paprika around the brim of the plate.

Drizzle olive oil on top before serving.
