Prepare the ingredients: 600 grams of pork, 600 grams of sauerkraut, and 100 grams of pearl barley that has been soaked overnight.

In a pot, layer half of the sauerkraut, then add cubed pork on top, followed by the soaked pearl barley with its soaking water.

Add the remaining sauerkraut on top without mixing.

Season with a bit of salt and sugar if the sauerkraut is too sour, then add water to cover the ingredients.

Cover the pot and simmer on low heat for 2-3 hours until the barley and pork are cooked.

Meanwhile, peel and boil the yellow potatoes until tender.

Prepare the duck fillet by searing it skin-side down in a non-stick skillet without adding oil, cooking for about 4 minutes until golden.

Flip the duck fillet and cook for another 4 minutes, then transfer it to a silicone baking dish and cover with foil.

Bake the duck in the oven at 190 degrees Celsius until fully cooked.
