In a bowl, combine 1 cup semolina, 1/2 cup yogurt, and 1/2 cup water. Mix well and let it rest for 10 minutes.
After 10 minutes, check the mixture and mix again.
Add finely chopped onion, salt, and any vegetables of your choice to the mixture.
Adjust the consistency of the batter by adding a little water if it's too thick.
In a pan, heat 1 tablespoon of oil and add mustard seeds, green chilies, and curry leaves. Sauté until fragrant.
Add the tempered mixture to the batter and mix well.
Add 1/4 teaspoon of baking soda and mix immediately before cooking.
Grease the appe pan and fill each cavity halfway with the batter.
Cover and cook for 2-3 minutes until puffed up.
Flip the appe and cook for another 2-3 minutes until golden brown on both sides.
Remove from the pan and serve hot with coconut chutney or green chutney.
