1 cup freshly grated coconut

1 teaspoon rock salt
2 tablespoons oil

1 teaspoon chana dal
1 teaspoon urad dal
1 teaspoon mustard seeds
1 teaspoon cumin seeds
2 red chilies
a few fresh curry leaves
1/2 teaspoon turmeric powder
2 tablespoons freshly ground masala powder

Add 2 teaspoons of oil to a pan

Add 1 teaspoon of chana dal and slightly roast it

Add 1 teaspoon of cumin seeds, 1 teaspoon of mustard seeds, and 8 red chilies and roast them

Once the mustard seeds start splattering, add 6 cloves of garlic (with skin) and a few bits of tamarind and roast together on low flame

Add 1 cup of freshly grated coconut to the pan and roast for about 2 minutes until moisture evaporates

Add 1/2 teaspoon of asafoetida and 1 teaspoon of rock salt, roast for another minute, and switch off the stove

Transfer the roasted ingredients to a plate and cool completely

Once cooled, transfer to a mixer jar and grind to a coarse powder consistency

In a separate pan, add 2 tablespoons of oil and a handful of peanuts and roast them

Add 1 teaspoon of chana dal and 1 teaspoon of urad dal and roast until golden brown

Add 1 teaspoon of mustard seeds, 1 teaspoon of cumin seeds, and 2 red chilies cut in half and roast

Add a few fresh curry leaves and 1/2 teaspoon of turmeric powder and mix

Add 2 tablespoons of freshly ground masala powder according to the rice quantity and mix on low flame

Add the prepared rice to the pan and mix well until combined

Taste the rice and add more masala powder and salt as needed

Add 1 teaspoon of ghee to enhance flavor and mix well
