Heat a little ghee and some oil in a pan.
Add cumin seeds, cinnamon, cloves, and bay leaf; sauté until fragrant.
Add asafoetida and dried red chili; sauté for a moment.
Add onion paste and sauté for 2 minutes.
Add garlic paste and mix well; sauté for another 2 minutes.
Add tomato puree and mix well.
Add red chili powder, turmeric, and coriander powder; mix thoroughly.
Add garam masala and kasuri methi; sauté for 5-7 minutes until the raw smell is gone and the oil separates.
Add salt and a little sugar; mix well.
Add fresh cream and mix thoroughly.
Add the corn paste and boiled potatoes; mix well.
Adjust consistency with water if needed; mix well again.
Add the boiled corn and mix thoroughly.
Cook for another 3-4 minutes until everything is well combined and heated through.
Turn off the gas and transfer the subzi to a serving bowl.
Garnish with chopped coriander before serving.
