Prepare 500 grams of ground beef by seasoning it with salt and pepper to taste.

Add 2 crushed garlic cloves, 20 grams of finely chopped celery, 30 grams of bell pepper, 40 grams of chitake mushrooms, 20 grams of cilantro, and 50 grams of finely chopped onion to the beef and mix well.

Heat oil in a frying pan over medium heat and add the plantains to brown them evenly.

In another skillet, heat 3 tablespoons of olive oil and add the seasoned ground beef to brown it.

After about 12 minutes, add 1 1/2 teaspoons of tomato paste to the meat and brown it a little.

Add 4 green olives and 2 grated very ripe tomatoes to the meat mixture and cook for another 5 minutes.

Remove the plantains from the heat and let them cool slightly before slicing them down the middle without cutting all the way through.

Scoop out some of the flesh to create a canoe shape.

Place a little cheese on the bottom of each plantain canoe, then fill with the ground beef mixture.

Top with grated Parmesan cheese.

Preheat the oven and bake at 180°C for approximately 6 to 8 minutes to melt the cheese.
