Indian Spiced Lentil Soup

2-3 teaspoons Olive oil
2 cups Onion - medium - diced
3-4 stalks or 2 cups Celery stalks - diced
2-3 or 2 cups Carrots - diced
½ teaspoon Sea salt
Ground pepper
4-6 cloves Garlic - minced
1.5-2 cups Green or brown lentils
8 cups Water
2-4 teaspoons Curry powder
1 tablespoon Garam masala
1 teaspoon Cinnamon

Add 2 teaspoons of oil

You can also use chicken stock

Cover & cook for 20 minutes until lentils are tender & cooked through

Don’t forget to taste for preference!

Add more water if necessary

Serve with fresh lemon or lime juice

Bring a pot of hot water to boil and add in chicken breast

Cook for 10 mins

Check to see if cooked all the way through

Once the chicken has cooled, use your hands to shred
