Cozonac is a traditional Romanian sweet bread, often enjoyed during holidays and special occasions. Its rich filling of cocoa and nuts symbolizes abundance and celebration. This beloved dessert has variations across Eastern Europe, with each region adding its unique twist, making it a cherished treat for many families.
Warm the milk in the microwave to around 30 to 35 degrees Celsius (95 to 100 Fahrenheit).
Sift the flour into a bowl.
Break the yeast into chunks and add to the flour.
Add the warm milk to the flour and yeast mixture, cover with a towel, and let it sit in a warm place for 15 minutes.
In a separate bowl, combine the egg yolks, whole egg, salt, vanilla extract, lemon zest, and sugar.
After 15 minutes, combine the flour-yeast-milk mixture with the egg mixture and mix until well combined.
Transfer the sticky dough to a floured surface and knead gently, adding flour as needed to reduce stickiness.
Place the dough back in a floured bowl, cover, and let it rise in a warm place for at least 30 minutes.
Once risen, divide the dough into three equal parts and flour them lightly.
Incorporate raisins into the dough, then braid the three parts together.
Preheat the oven to 170 degrees Celsius (340 Fahrenheit).
Transfer the braided dough to a baking sheet lined with parchment paper.
Brush the top with egg white and sprinkle sugar on top.
Optionally, add almonds on top.
Bake in the oven for 35 to 40 minutes.
