This dish showcases the island's love for flavorful, slow-cooked meats, usually seasoned with a blend of spices that reflect its diverse culinary heritage. Modern variations include serving it as pulled pork in sandwiches or tacos, making it a favorite in many global cuisines.

Pour 1 cup of orange juice into a blender.
Add white vinegar, oyster sauce, 2 garlic cloves, and half a red onion cut smaller to the blender.
Blend until the mixture is pureed to create the wet marinade.
In a bowl, combine garlic powder, onion powder, salt, black pepper, and cumin to make the dry rub.
Prepare the pork shoulder by trimming excess fat; it should weigh about 5.5 pounds.
Pour about half of the wet marinade over the pork shoulder.
Sprinkle about half of the dry rub over the pork shoulder.
Place the pork in a roasting pan and put it in the oven at 375°F.
After 3 hours, remove the pork from the oven.
Pour the remaining half of the wet marinade over the pork, ensuring it's well coated.
Add the remaining dry rub to the pork and move it around to ensure seasoning penetrates the meat.
Lower the oven temperature to 275°F and return the pork to the oven for another 3 hours.
After a total of 6 hours, check the pork; it should be done.
Let the pork sit for about 15 minutes to allow the juices to redistribute.
