Clean 1 kilogram of shrimp by removing the head and shell, making a small cut along the back to extract the meat carefully.

Use the shrimp shells to make a broth: heat a skillet, add a little vegetable oil, and sauté the shells until they turn orange (about 1 minute).

Add 2 cups of water to the skillet with the shells and simmer for 30 to 40 minutes over medium heat to extract flavor.

Prepare the vegetables for the sauce: chop 2 stalks of celery, 2 red bell peppers (removing seeds), 3 tomatoes (peel and remove seeds), 2 yellow chili peppers, and 1 red onion into irregular pieces.

Heat a saucepan and add a little vegetable oil. Once hot, add the chopped vegetables (celery, bell peppers, yellow chili, onion, and garlic) and sauté for about 10 minutes until caramelized, stirring constantly to prevent burning.

After 8 minutes, add the chopped tomatoes and cook for an additional 30 minutes over low heat, stirring occasionally. If the sauce dries out, add a bit of water or shrimp broth.

Once the sauce is ready, let it cool for a minute, then blend it until smooth, passing it through a strainer to remove any solids.

In the same saucepan used for the sauce, add the shrimp broth and the blended sauce. Add 3 cups of pre-washed rice and season with salt to taste, ensuring the liquid level is about 3.5 cups.

Bring the mixture to a boil, then reduce the heat to low once the liquid is level with the rice. Do not add the shrimp yet to avoid overcooking.
