1

Start by adding 500 grams of mutton chops into a pressure cooker.

2

Add 2 large cardamom pods, 1 stick of cinnamon, and 1 small roughly chopped onion.

3

Pour in 1.5 glasses of water and add 1 teaspoon of salt.

4

Pressure cook for 15 minutes to ensure the mutton becomes soft.

5

In a separate pan, heat 1/3 cup of cooking oil.

6

Add 1 tablespoon of fresh ginger-garlic paste and fry for a few seconds.

7

Add 2 large peeled and roughly chopped tomatoes and fry them.

8

Mix in 0.5 teaspoon turmeric powder, 0.5 teaspoon red chili powder, 1 teaspoon fresh coriander powder, and 1 teaspoon cumin powder, along with a little water to prevent burning.

9

Add 2 tablespoons of fried onions to the mixture and continue to fry for 5 minutes until the tomatoes are well cooked and mixed with the spices.

10

Beat 0.5 cup of yogurt until smooth and add it to the pan, ensuring to mix well to avoid curdling.

11

Cover the pan and cook for 5 minutes to allow the tomatoes to mash and the spices to blend well.

12

Once the mutton is cooked, add the prepared spice mixture to the pressure cooker with the mutton.

13

Cook for an additional 5 minutes to allow the mutton to absorb the flavors of the spices.

14

Add nutmeg and mace powder for extra flavor.

15

Stir in 0.5 teaspoon of black pepper powder and 0.5 teaspoon of garam masala.

16

Add some sliced fresh ginger and chopped green chilies, mixing well.

17

Cook for another 1-2 minutes to let the flavors meld together.

18

Serve the mutton chop masala with naan, roti, or rice.
