Sakotis

Sakotis, also known as 'tree cake,' originates from Lithuania and is traditionally made for special occasions and celebrations. Its unique shape and texture come from a special rotating baking method, creating a layered appearance reminiscent of tree bark. Today, sakotis is enjoyed not only in Lithuania but also in neighboring countries, often featured at weddings and festive gatherings.

4 large eggs
1 cup granulated sugar
1/2 cup unsalted butter
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon vanilla extract
1 cup milk
1/2 teaspoon salt
1/4 cup cornstarch
1/2 cup powdered sugar
1 cup whipped cream
4 oz chocolate
fruit for garnish
nuts for garnish

Preheat the oven to 350°F (175°C).

In a mixing bowl, beat the eggs and sugar together until light and fluffy.

Melt the butter and let it cool slightly before adding to the egg mixture.

Mix in the milk and vanilla extract until well combined.

In a separate bowl, whisk together the flour, baking powder, cornstarch, and salt.

Gradually add the dry ingredients to the wet mixture, stirring until just combined.

Prepare a special sakotis baking mold by greasing it thoroughly.

Pour the batter into the mold, filling it about halfway.

Place the mold in the preheated oven and bake for 40-50 minutes, until golden and a toothpick comes out clean.

Remove from the oven and let cool in the mold for 10 minutes before transferring to a wire rack.

Once cooled, dust the sakotis with powdered sugar.

Melt chocolate and drizzle over the top for decoration.
