Instructions
- 1Rinse red lentils under cold water until water runs clear.

- 5Add curry powder, cumin, and turmeric; stir for 1 minute to toast the spices.
- 6Pour in vegetable broth and bring to a simmer.
- 7Add red lentils and diced tomatoes; cook until lentils are tender, about 20 minutes.
- 8Stir in coconut milk and spinach; cook until spinach wilts, about 3-4 minutes.
- 9Season with lime juice, salt, and pepper to taste.
- 10Garnish with chopped cilantro before serving.

Instructions

- 2In a bowl, mix together the peanut butter, soy sauce, sesame oil, honey, rice vinegar, garlic powder, and ginger powder until smooth.
- 3In a large mixing bowl, combine the cooked noodles with the peanut sauce, tossing to coat evenly.
- 4Add the chopped green onions, shredded carrots, and bean sprouts to the noodles and mix well.
- 5Serve the noodles in bowls, garnished with chopped peanuts and additional green onions if desired.
