Gather ingredients: 2 cups whole milk, 1 cup heavy cream, 3/4 cup granulated sugar, 1 tbsp pure vanilla extract, 4 large egg yolks, 1/2 cup heavy cream for chocolate sauce, 4 oz semi-sweet chocolate chips, 2 tbsp unsalted butter, and whipped cream for topping.
Heat the milk, sugar, and half of the heavy cream in a medium saucepan. Stir until the sugar dissolves, making sure not to let it boil.
Remove from heat once the sugar is fully dissolved.
In a separate bowl, whisk the egg yolks.
Gradually pour the warm milk mixture into the egg yolks while whisking constantly to temper the eggs.
Pour the tempered mixture back into the saucepan and cook over medium heat, stirring constantly until it thickens and coats the back of a spoon, creating a custard base.
Strain the custard through a fine mesh sieve into a bowl.
Add the remaining heavy cream and vanilla extract to the strained custard and stir until smooth.
Cover the bowl and chill the custard in the refrigerator for at least 2 hours or overnight.
Once chilled, churn the custard in an ice cream maker according to the manufacturer's instructions.
While the ice cream is churning, make the chocolate sauce by heating the heavy cream in a small saucepan until it begins to simmer.
Remove from heat and add the chocolate chips and butter, stirring until smooth and glossy.
Once the ice cream is ready, serve it in bowls or glasses.
Drizzle the warm chocolate sauce over the top of the ice cream.
Finish with a generous dollop of whipped cream.
