Add the lemon zest and vanilla extract, stirring gently.
Grease a muffin tin or individual tart molds with butter.
Pour the batter into the prepared molds, filling them about 2/3 full.
Bake in the preheated oven for 20-25 minutes or until golden brown.
Remove from the oven and let cool slightly in the molds.
Carefully transfer the queijadas to a wire rack to cool completely.
