1 cup split pigeon peas (approx. 150gms)
1.5 - 2 cups water
1/2 teaspoon salt
1/4 teaspoon turmeric powder
2 tablespoons oil
1 teaspoon mustard seeds
1/2 teaspoon fenugreek seeds
2-3 dry red chillies
1 finely chopped green chili
10-12 curry leaves
1/4 teaspoon asafoetida
1 onion (julienne)
2 tomatoes (roughly chopped)
1 carrot (cut in small pieces)
10-12 pieces of pumpkin
10-12 pieces of brinjal
8-10 pieces of drumsticks
1/2 teaspoon Kashmiri red chili powder
2 tablespoons sambar powder
4-5 tablespoons tamarind water
1/2 cup water
1 small piece of jaggery
finely chopped coriander

Soak 1 cup of split pigeon peas in water for half an hour.

Add soaked split pigeon peas to a pressure cooker with 1.5 - 2 cups of water, 1/2 teaspoon of salt, and 1/4 teaspoon of turmeric powder. Close the lid and cook until 3 whistles or until fully cooked.

In a pan, heat 2 tablespoons of oil.

Add 1 teaspoon of mustard seeds and let them crackle.

Add 1/2 teaspoon of fenugreek seeds, 2-3 dry red chillies, 1 finely chopped green chili, and 10-12 curry leaves. Cook for 20-30 seconds.

Add 1 julienned onion and cook for 2-3 minutes until pink and mushy.

Add 2 roughly chopped tomatoes and cook for 3-4 minutes until mushy.

Add 1 carrot, 10-12 pieces of pumpkin, 10-12 pieces of brinjal, and 8-10 pieces of drumsticks. Cook for 1-2 minutes.

Add salt, 1/2 teaspoon of Kashmiri red chili powder, and 2 tablespoons of sambar powder. Mix well to coat the veggies.

Add 4-5 tablespoons of tamarind water and 1/2 cup of water. Cook on low-medium flame for 3-4 minutes until veggies are almost cooked.

Check the split pigeon peas and ensure they are not ground but lightly whisked for texture.

Add half an onion cut into cubes and 1 small piece of jaggery. Cook for 1 minute.

Add the boiled split pigeon peas and mix well. Bring to a boil, then reduce to medium heat and boil for 3-4 minutes.

Adjust salt and water as needed, ensuring not to cover the pan to avoid overcooking the veggies.

Add finely chopped coriander and mix before serving.
