4 cups flour
1 tsp salt
1 tsp ground cumin
½ cup vegetable oil
¾ cup water
4 medium potatoes
1 red onion
½ cup frozen peas
½ cup chopped fresh cilantro
1 tbsp ghee
1 tsp garam masala
1 tsp ground turmeric
1 tsp chili powder
1 tsp ground coriander
1 tsp paprika powder
salt and black pepper
oil for frying

Sauté the onions in ghee or oil until translucent.

Add in the boiled diced potatoes, garam masala, ground turmeric, chili powder, ground coriander, paprika powder, salt, and pepper, and cook until the potatoes are tender.

Mash everything together with a fork until mostly smooth, then fold in the peas and cilantro. Set aside to let the filling cool completely.

Mix the flour, salt, and cumin in a large bowl.

Add water and oil slowly, then knead until a smooth, firm dough forms.

Divide the dough into small balls and roll each ball into a thin circle and cut it in half.

Shape each half into a cone, fill with the potato mixture, and seal the top with a little water.

Heat neutral oil in a deep skillet and fry the samosas in batches until they are golden brown and crispy.
