Today, brioche buns are popular in many countries, enhancing the burger experience with their slightly sweet flavor and soft texture.

Whole wheat flour adds fiber, while bread flour can enhance texture.
Prepare the tangzhong by mixing 25gr of milk, 25gr of water, and 15gr of flour T65 in a saucepan over low heat until it thickens. Let it cool.
In a mixing bowl, combine 220gr of flour T65, 25gr of sugar, and 7gr of dry yeast.
Add the cooled tangzhong, 80gr of milk, 30gr of softened butter, and 1 whole egg to the dry ingredients. Mix until a dough forms.
Knead the dough until smooth and elastic, then let it rise until doubled in size.
Once risen, shape the dough into 4 buns and place them on a baking tray.
Cover the buns and let them rise again until puffy.
For the egg wash, beat 1 egg with a little milk and brush it over the buns before baking.
Bake in a preheated oven until golden brown.
