Activate yeast in warm water with sugar until frothy, about 5-10 minutes.
In a large bowl, combine flour and salt.
Add activated yeast mixture, eggs, and milk to the flour mixture.
Mix until a shaggy dough forms.
Knead the dough on a floured surface until smooth, about 10 minutes.
Incorporate softened butter gradually while kneading until fully absorbed.
Place dough in a greased bowl, cover, and let rise until doubled, about 1-2 hours.
Punch down the risen dough and divide into equal portions.
Shape each portion into a ball and flatten slightly.
Place shaped dough on a baking sheet lined with parchment paper, cover, and let rise again for 30-45 minutes.
Preheat oven to 375°F (190°C).
Brush tops with egg wash and sprinkle with sesame seeds if desired.
Bake until golden brown, about 15-20 minutes.
Cool on a wire rack before slicing.
