In a mixing bowl, combine 3 and 1/4 cups all-purpose flour and 2 teaspoons kosher salt.
Add 1 and 1/2 teaspoons SAF gold instant yeast to the flour mixture and mix.
Add 5 large cold eggs and 3 tablespoons cold milk to the mixture and beat until combined.
Switch to a dough hook and knead on first speed for 4 minutes, then on second speed for 3 minutes.
Gradually add 1/3 cup granulated white sugar over a 5-minute period while kneading on second speed.
Add 1 cup cold unsalted butter, softened but still cold, and knead for 10-15 minutes until smooth and elastic.
Transfer the dough to a lightly oiled bowl, cover with plastic wrap, and let proof for 1 hour at room temperature.
After 30 minutes, stretch the dough to equalize temperature and strengthen it, then cover and let proof for another 30 minutes.
Refrigerate the dough overnight to improve flavor and make it easier to shape.
