Steak and Guinness Pie is a classic Irish dish that combines tender beef with the rich flavors of Guinness stout, encased in flaky pastry. Traditionally enjoyed in pubs, it reflects the hearty nature of Irish cuisine, often served during gatherings and celebrations. Today, it has gained popularity beyond Ireland, with variations appearing in many countries, showcasing the universal love for comforting meat pies.

Guinness stout

Phyllo dough is lower in fat than puff pastry.
Put flour in a food processor with a pinch of salt.
Add cold butter to the flour and pulse until it looks like fine breadcrumbs.
Add water little by little until the mixture comes together.
Dust work surface with flour and knead the mixture for about 1 minute.
Wrap the dough in cling film and put it in the fridge for about 30 minutes.
Cut Angus beef into large chunks.
Heat vegetable oil in a pan over medium heat and brown the beef.
Remove beef from the pan and deglaze with a little Guinness to lift the fond.
Slice onion, carrot, and garlic.
In a deep pan or Dutch oven, heat olive oil and add onions and carrots with salt, black pepper, and dried thyme.
Sweat the vegetables on low heat for about 5 minutes without browning them.
Add garlic and cook for another 5 minutes.
Stir in tomato paste and cook for 2 minutes.
Add Worcestershire sauce and stir everything together.
Add the browned beef back into the pan.
Pour in Guinness and add the deglazed beef juices.
Add flour to thicken the mixture and stir well.
Pour in beef stock and stir to combine.
Cover the pan and place it in a 350°F oven for about 2 hours.
Check the consistency of the mixture; it should be thick.
Roll out the short crust pastry to a thin layer.
Cut the pastry about an inch larger than the pie dish.
Place the pastry over the pie filling and cut off excess dough.
