In another bowl, whisk together 2 eggs, 3 tbsp sugar, 1 tsp vanilla extract, and 3 tbsp melted unsalted butter.

Combine the wet ingredients with the flour mixture and mix to combine.

Heat a griddle or frying pan over medium heat and add butter to grease it.

Pour up to 1/3 cup of pancake batter onto the griddle.

Cook until bubbles form on top, for about 2 minutes.

Flip the pancake and cook for another 1-2 minutes until golden brown.
