2 tbsp red chilli powder
2 tbsp black salt
½ cup coconut (grated)
2 tbsp sesame seeds
4-5 nos. dry red chilli
2 nos. bay leaf
¼ cup sugar
2 tbsp oil
1 cup roasted peanuts
Salt as per taste
¼ tsp turmeric powder
1 tbsp red chilli powder
½ black pepper powder
1 tbsp powder sugar
1 tsp lemon juice
2 tbsp hot oil
4 nos. raw banana (boiled & mashed)
3 tbsp oil
¼ tsp asafoetida (hing)
1 cup tomato puree
1 tbsp red chilli powder
½ tbsp coriander powder
½ tbsp cumin powder
3 tbsp dabeli masala
½ cup coconut (grated)
2 tbsp imli chutney
Salt as per taste

In a pan, dry roast coriander seeds, cumin seeds, black peppercorns, fennel seeds, cinnamon stick, black cardamom, cloves, star anise, red chilli powder, and black salt until fragrant.

Transfer the roasted spices to a bowl.

In the same pan, roast coconut, sesame seeds, dry red chilli, and bay leaf for a minute or two, then transfer to a mixer jar and grind to a coarse powder.

Mix the ground spices with sugar and oil to prepare the dabeli masala.

In a bowl, mix roasted peanuts with salt, turmeric powder, red chilli powder, black pepper powder, powdered sugar, lemon juice, and hot oil; set aside.

In a pan, heat oil and add asafoetida, then add tomato puree and cook for 1-2 minutes.

Add red chilli powder, coriander powder, cumin powder, and dabeli masala; mix well.

Stir in grated coconut and imli chutney, cooking until oil releases, then add boiled and mashed banana, mixing well and adding salt to taste.

In the same pan, prepare ragda by mixing oil, prepared stuffing, imli chutney, and water; cook for 2-3 minutes.

To assemble, cut the pav in half, apply imli chutney, add ragda, spread the stuffing, top with masala peanuts and sev, and roast the dabeli in butter before serving hot.
