Start by making the sauce with butter in a pan.

Add equal quantities of refined flour (maida) to the butter and cook on low flame, then increase the flame to make it nutty and aromatic without burning.

Add chopped garlic and red onions to the butter and flour mixture, cooking on low flame while stirring constantly to avoid discoloration or burning.

Gradually add milk a little at a time to the mixture, stirring to prevent lumps, until the sauce thickens.

Season the sauce with dried oregano, chili flakes, freshly cracked black peppercorns, and salt, mixing well until the sauce is ready.

Add washed and cut exotic vegetables to the sauce, which have been blanched in hot water, and mix well.

Add 1 cup of water to the sauce, increase the flame, and cook until it reaches a rolling boil for 2-3 minutes to cook the vegetables.

For the pasta, bring 1 liter of water to a rolling boil, add 1 teaspoon of salt, and then add 1 cup of Weakfield pasta, boiling for 10-12 minutes until three-fourths cooked.

Once the pasta is cooked, drain it and add it directly to the sauce without cooling it down or adding oil, mixing well to combine.

Transfer the pasta and sauce mixture into a baking dish or casserole, then add grated cheese on top.

Bake in an oven at 200 degrees Celsius for 12 minutes until done.
