Start with a pot of plain tomato sauce, checking if it's salted; if not, add salt to taste.
Add minced garlic, oregano, basil, and Parmesan cheese to the sauce and mix.
Add El Yucateco red hot sauce and simmer on low to medium heat for at least 30 minutes, stirring frequently.
Prepare mostaccioli pasta according to the box instructions, adding olive oil and salt to the boiling water.
Once cooked, strain the pasta and add to a large mixing bowl with a little olive oil; mix well.
Add the tomato or marinara sauce to the pasta and stir in ricotta cheese until creamy.
Transfer the mixture to a baking dish, spraying with nonstick spray if not non-stick.
Top generously with mozzarella cheese and fresh chopped parsley.
Preheat the oven to 425°F and bake for approximately 20 minutes or until the cheese is melted to your liking.
Remove from the oven and garnish with fresh basil leaves and Parmesan cheese before serving.
