1 teaspoon seasoned salt

Add 2 cups of water to a pot on the stove.

Add the boneless saltfish to the pot to remove excess salt, changing the water at least three times.

After boiling the saltfish, transfer it to a plate and let it cool slightly.

Rip the saltfish into pieces, being careful not to shred it too much.

Heat 6 spoonfuls of vegetable oil in a pot over medium heat.

Add the chopped onion to the pot and sauté for at least 1 minute.

Add the ripped saltfish to the pot and fry for at least 2 minutes on low heat.

Add the bell peppers, tomato, and scotch bonnet pepper to the pot and sauté for an additional minute.

Add some of the seasoning (black pepper, everyday seasoning, seasoned salt) to the pot and stir well, reserving some seasoning for the ackee.

Gently fold in the ackee, taking care not to mash it.

Add the remaining seasoning and more black pepper to taste, then fold gently again.

Add chopped spring onions, remaining bell peppers, and tomato to the pot.

Cover the pot and allow the ackee and saltfish to cook for 5 minutes.
