Cut the celery and place it in a tall cooking pot.

Cut the onion and add it to the celery.

Add garlic and thyme to the pot with the mussels.

Season with lots of black pepper and add white wine.

Cook on high heat with the lid on.

Drain the mussels and remove the loose side of the shell.

Place the mussels in their liquid and set aside.

In a blender, combine 4 egg yolks, 4 tbsp mustard, 70 ml white wine vinegar, 5 tbsp mussels liquid, and 1 tsp salt; mix into a smooth sauce.

While mixing, add 300 grams of sunflower oil to the blender.

Pour the sauce into a nice bowl or saucepan.

Hang the mussels nicely over the edge of the bowl.

Finish with pickles, jalapenos, chives, black pepper, and lemon zest.
