Add 2 tablespoons of minced onion and 1 cup of corn to the meat and cook together.
Add 1 teaspoon of sea salt, 1 tablespoon of chili powder, oregano, paprika, a pinch of cayenne pepper, black pepper, and cornmeal to the meat mixture.
Stir in 1 cup of tomato sauce and 2 cloves of minced garlic.
Simmer the sauce on medium heat for 5 to 10 minutes until it reaches the desired thickness.
Blot the zucchini boats to remove excess moisture before filling them.
Fill the zucchini boats with the meat mixture and top with cheese.
Place the filled zucchini boats on a baking sheet and bake in a 400 degree oven for 20 minutes.
Check that the cheese is browned and bubbly and that the zucchini is barely tender with a sharp knife.
