Baked Chickpea Sweet Potato Curry

1 medium onion
2 cloves garlic
1 inch ginger
2 medium sweet potatoes
1/2 tsp salt
2 tbsp curry powder
1 tbsp peanut butter
1 can (14 oz) coconut milk
1 cup diced tomatoes
1 can (15 oz) chickpeas, drained and rinsed
1 cup water
1 cup spinach, chopped
Fresh cilantro for garnish
1/4 tsp red pepper flakes
2 tbsp lime juice
1 cup cooked rice
1 cup cauliflower rice
2 pieces flatbread

Combine onion, garlic, and ginger with sweet potato, salt, and spices in a pan.

Mix each ingredient up a little bit but keep the sweet potatoes and onions separate.

Bake until the onions are golden.

Add peanut butter and coconut milk to the pan and mix the peanut butter into the coconut milk.

Add tomatoes, salt, chickpeas, and water, mixing well.

Bake again.

Fold in spinach until it wilts from the heat of the sauce.

Serve the baked curry garnished with cilantro, pepper flakes, and lime juice over rice, cauliflower rice, or flatbread.
