2 cups water
3 cloves garlic
1 tablespoon thyme
1 tablespoon ginger
1 tablespoon brown sugar
1 teaspoon salt
1 cup coconut milk
4 green onions (scallions)
1 scotch bonnet pepper
2 tablespoons butter
2 cups long-grain rice (brown par-boiled rice)

Wash the red beans and put them in a pot with water.

Add whole garlic cloves to the pot without cutting them.

Add thyme, ginger, and brown sugar to the pot.

Add salt to taste.

Turn the heat to high and cover the pot.

Check the beans periodically to ensure the water doesn't dry out, adding more water if necessary.

Once the beans are soft, add scallion, more thyme, and half of a can of coconut milk to the pot.
