250 grams soaked white chickpeas
800 milliliters water
1/2 teaspoon salt
1 teaspoon cumin seeds
2 teaspoons coriander seeds
1/4 teaspoon carom seeds
1/4 teaspoon fennel seeds
2 star anise
1/4 teaspoon black peppercorns
5 pods cloves
1 cinnamon stick
3 pods green cardamom
1 black cardamom
1/8 teaspoon nutmeg powder
1 mace flower
1 teaspoon red chili
1 teaspoon turmeric
1 teaspoon garlic powder
1/4 teaspoon ginger powder
3/4 teaspoon dry mango powder
130 grams onions
1 tablespoon parsley
1 teaspoon salt

On a board, place 550 grams raw bananas and prick it with the help of a fork.

Place it on a steamer and steam for 10 - 12 minutes.

Take a pressure cooker, add 250 grams soaked white chickpeas, 800 milliliters water, and 1/2 teaspoon salt and cover it with a lid. Cook until you hear 2 whistles.

Take a pan, add cumin seeds, coriander seeds, carom seeds, fennel seeds, star anise, black peppercorns, cloves, cinnamon stick, green cardamom, black cardamom, nutmeg powder, mace flower and dry roast for 2 minutes.

Remove it from heat and transfer this into a blender. Blend it well.

Transfer this into a bowl, add red chili, turmeric, garlic powder, ginger powder, and dry mango powder and mix it well.

In a blender, add boiled chickpeas and blend it well.

Transfer this into a bowl, add blended chickpeas, salt, and prepared masala and mix it well.

Take some mixture in your hands and place skewers in it and shape it into a kebab.

Place it on a baking tray and brush it with oil.

Preheat the oven to 400°F/200°C. Bake for about 10 - 12 minutes.

Heat sufficient oil in a pan and shallow fry these until they turn golden brown in color from all sides.

Remove it from heat and drain it on absorbent paper.
