Sheet Pan Breakfast

1 pound potatoes, diced or quartered
1/2 red bell pepper, diced
1/2 green bell pepper, diced
1/2 small yellow onion, diced
2 tablespoons unsalted butter, melted
1/4 teaspoon cayenne
1 teaspoon paprika
2 teaspoons garlic powder
1 1/2 teaspoons salt
1/2 teaspoon black pepper
6 slices Hormel Natural Choice Bacon
5 large eggs
1/2 teaspoon salt
1/2 teaspoon pepper

Preheat oven to 425 degrees F and line a baking sheet with a silicone mat.

Place potatoes onto baking sheet and toss with melted butter and spices (cayenne, paprika, garlic powder, salt, and pepper).

Using your hands, spread out into an even layer.

Place bacon, in a single layer, on top of potatoes.

Bake for 10 minutes.

Remove from oven and stir potatoes.

Crack eggs in between the bacon slices and sprinkle with remaining salt and pepper.

Bake an additional 10-20 minutes, or until eggs are cooked to your liking.

Serve immediately!
