- ●1 lb chicken breast, diced
- ●1 lb shrimp, peeled and deveined
- ●1 cup andouille sausage, sliced
- ●2 cups bell peppers, diced
- ●1 cup onion, diced
- ●4 cloves garlic, minced
- ●2 cups long-grain rice
- ●4 cups chicken broth
- ●1 can (14.5 oz) diced tomatoes
- ●2 tsp Cajun seasoning
- ●1 tsp paprika
- ●1/2 tsp cayenne pepper
- ●1/2 tsp salt
- ●1/2 tsp black pepper
- ●2 tbsp olive oil
- ●1/4 cup green onions, chopped (for garnish)
Instructions
- 1Preheat the oven to 400°F (200°C).
- 2In a large bowl, combine the chicken, shrimp, and sausage with olive oil, Cajun seasoning, paprika, cayenne pepper, salt, and black pepper. Mix well to coat the proteins evenly.
- 3Spread the mixture evenly on a large sheet pan.
- 4In a separate bowl, combine the rice, diced tomatoes (with juice), chicken broth, bell peppers, onion, and garlic. Stir to combine.
- 5Pour the rice mixture over the protein on the sheet pan, spreading it evenly.
- 6Cover the sheet pan tightly with aluminum foil.
- 7Bake in the preheated oven for 25 minutes.
- 8Remove the foil and stir the mixture gently to combine. Return to the oven and bake uncovered for an additional 10-15 minutes, or until the rice is cooked and the liquid is absorbed.
- 9Remove from the oven and let it sit for 5 minutes before serving.
- 10Garnish with chopped green onions before serving.
