Indian Restaurant Base Gravy

Cut onions into quarters.
Cut tomatoes into quarters.
Cut green peppers in half, remove seeds, and then cut into quarters.
Top and tail the carrots, then cut into smaller pieces for quicker cooking.
Prepare a pot and add 1 cup of vegetable oil, heating it up.
Add 4 tablespoons of ginger and garlic paste to the heated oil and cook for 2-3 minutes until the raw smell is gone.
Add 2 teaspoons of salt to the mixture, adjusting to taste.
Add 2 teaspoons of curry powder, 2 teaspoons of ground coriander powder, 2 teaspoons of ground cumin powder, 0.5 teaspoon of general garam masala, and 0.5 teaspoon of chili powder to the pot, mixing well.
Add a little water to prevent the spices from burning and cook for 1-2 minutes.
Add 4 tablespoons of tomato puree to the pot and mix well with the spices.
Add all prepared vegetables to the pot and mix thoroughly.
Add 3 liters of water to the pot and mix again.
Cover the pot and let it cook on medium heat for 1 to 1.5 hours, checking occasionally to ensure it doesn't stick to the bottom.
