The samosa, originally from the Middle East, has been embraced in India, where it is often filled with spiced potatoes and peas. Today, variations like these are popular in modern kitchens, offering a quick and versatile snack option that can be baked or fried, appealing to diverse palates.

Wash and dry 2 potatoes, then pierce them all over with a fork.
Place the potatoes on a plate and microwave on high for about 4 minutes.
Flip the potatoes and microwave again for another 3-4 minutes until tender.
Once cool to the touch, peel the potatoes and gently crumble them into a bowl.
Toast cumin seeds and coriander seeds in a small frying pan on medium-low heat for 2-3 minutes until fragrant.
Transfer the toasted spices to a mortar and pestle and grind until coarse.
Add the ground spices to the crumbled potatoes along with amchur powder, anardana powder, garam masala, chili powder, melted ghee, and salt; mix until well combined.
Fold in some frozen peas and chopped fresh coriander to the potato mixture.
In a bowl, mix flour and water until a thick paste forms to use as a glue.
Cut 10-inch tortillas down the middle; spread the flour paste on the cut side of the tortilla.
Fold the right side of the tortilla towards the left side to create a cone.
Stuff the cone with the spiced potato mixture and seal the top with more flour paste.
Brush the samosas with canola oil and place them in an air fryer basket.
Air fry at 400°F for about 10-12 minutes or until golden and crispy.
Optionally, bake in the oven or deep fry if preferred.
