6 ripe plantains, peeled and sliced
½ cup butter
2 cups shredded mozzarella cheese, divided

Preheat oven to 350°F (180°C). Butter square pan with 1 tablespoon of butter.

Heat a large skillet over medium-high heat with olive oil, add beef, salt, and pepper, stir and break up until fully cooked, about 10 minutes.

Add onion, green bell pepper, garlic, sazón, adobo, oregano, and vinegar. Mix well. Cook until brown and caramelized, about 15 minutes.

Add raisins and tomato sauce. Mix and let simmer for 10 minutes, then set aside.

Add the sliced plantains to boiling water. Season with salt. Boil for 10 minutes or until the plantains are soft. Drain.

Add the cooked plantains to a bowl, add salt, pepper, and butter. Mash until smooth. Set aside.

To assemble pastelón: Take your prepared square pan, start with a layer of mashed plantains, then the beef mixture, then a fistful of cheese, and repeat.

Bake in the oven at 350°F (180°C) for 30 minutes or until the meat sauce bubbles and the cheese is melted and golden brown. Serve with white rice and lime wedges.
