Add plain flour to a bowl.

Add 1 beaten egg to the bowl.

Pour in milk and season with salt.

Mix until all lumps are gone.

Drizzle olive oil into a pan.

Add a small amount of batter to the pan for pancakes.

Cook pancakes for about 1.5 minutes on each side over low to medium heat.

Look for bubbles on top to know when to flip the pancakes.

Remove pancakes when they are light brown, not caramelized.

Spread cottage cheese on top of each pancake.

Season cottage cheese with a crack of pepper.

Add chopped cucumber on top of the cottage cheese.

Place smoked salmon on top of the cucumber.

Sprinkle lemon rind over the smoked salmon.

Garnish with a small sprig of fresh dill.
