Heat 4 tablespoons of mustard oil in a pot.

Add minced garlic and sauté on low flame until fragrant.

Add 2 cups of yogurt and bring it to a boil on high flame.

Add 1 kg of marinated mutton and salt to taste, mixing well for 1-2 minutes on high flame.

Reduce the flame to low and cover the pot, cooking until the mutton is tender, about 20 minutes.

Check the mutton; it should be soft and have released its own water without adding any.

Add 2 chopped large tomatoes and mix well.

Increase the flame to high and cook until the gravy thickens.

Add 50 grams of tamarind water and 1 tablespoon of ghee, mixing well.

Add 1 cup of water and cover, cooking on high flame for 5-10 minutes.

Turn off the gas and let it sit covered for 5 minutes before serving.
