Heat 4 tablespoons of mustard oil in a pot.
Add whole spices: cinnamon, black cardamom, bay leaf, black pepper, and cloves.
Add turmeric and Kashmiri red chili powder.
Once the oil is hot, turn off the gas and let the oil cool slightly.
Add minced garlic and sauté on low flame until fragrant.
Add 2 cups of yogurt and bring it to a boil on high flame.
Add 1 kg of marinated mutton and salt to taste, mixing well for 1-2 minutes on high flame.
Reduce the flame to low and cover the pot, cooking until the mutton is tender, about 20 minutes.
Check the mutton; it should be soft and have released its own water without adding any.
Add 2 chopped large tomatoes and mix well.
Increase the flame to high and cook until the gravy thickens.
Add 50 grams of tamarind water and 1 tablespoon of ghee, mixing well.
Add 1 cup of water and cover, cooking on high flame for 5-10 minutes.
Turn off the gas and let it sit covered for 5 minutes before serving.
