Start by making the sweet and sour sauce: In a small pan over medium heat, combine 1 cup white vinegar, 2 tablespoons soy sauce, 3 star anise, 1/2 cup brown sugar, and 1/2 cup ketchup.

Cook the sauce for about 5 minutes, stirring until the sugar dissolves, and season with black pepper.

If a thicker sauce is desired, prepare a slurry with cornstarch and water and add it to the sauce.

In a large pan or wok, heat 2 tablespoons sunflower oil over above medium heat.

Add 3 cups cubed pork loin to the pan and cook for about 4-5 minutes, stirring occasionally.

Add 1 cup sliced onion, 1 tablespoon minced garlic, and 1 tablespoon minced ginger to the pork and cook for another 4 minutes on high heat.

Reduce the heat to below medium and add the prepared sweet and sour sauce and 1 teaspoon fish sauce to the pan.

Cook for another 4-5 minutes until the sauce thickens.

Add 1 cup chunky cut bell peppers and 1 cup chunky cut green onions to the pan, stir to combine, and turn off the heat.
