Dissolve fresh yeast in warm milk (96°F or 36°C) with 1 tablespoon of sugar and let it activate for 5-7 minutes.

Blend the mixture with a hand blender until smooth, then fold in half a cup of golden raisins if using.

Check the dough; it should have quadrupled in size. Weigh the dough and divide it into 12 equal pieces (about 80 grams each).

Shape each piece into a round bun and place them on a parchment-lined baking tray to proof for another 20 minutes.
