Viennese Apfelstrudel

Traditionally made with thin layers of dough wrapped around a spiced apple filling, it reflects the region's love for pastry and fruit. Today, variations abound, but the classic version remains a staple at festive gatherings and family meals, celebrated for its flaky texture and warm, comforting flavors.

Sunflower seeds are a nut-free option that adds crunch.
Combine 1.5 cups unbleached bread flour and 0.5 teaspoon fine sea salt in a bowl.
In a measuring cup, add 1 large egg, 1 tablespoon of neutral vegetable oil, and warm water to make about 2/3 cup.
Whisk the liquid ingredients together and add to the flour mixture.
Stir the mixture together and then knead using a mixer on second speed until combined.
Alternatively, knead by hand by pounding the dough against the work surface about 100 times.
Once kneaded, place the dough in a bowl, cover with oil, and let it rest at room temperature for at least 1-2 hours or overnight.
For the filling, add a little water to a pan and place it over medium heat.
Add sliced golden delicious apples, 0.5 cup of sugar, 0.5 cup of raisins, and cinnamon to the pan.
Cook the apple mixture until it sizzles, then cover and lower the heat for about 10 minutes.
Remove the cover and let it reduce until there is no liquid left, about 20-25 minutes.
Once reduced, stir in 3/4 cup of coarsely chopped walnuts and let the filling cool to room temperature.
Roll out the rested dough on a floured surface until thin, then drizzle a little oil on top to prevent drying.
Stretch the dough using your fists, being careful not to create holes, and anchor it over the edges.
Prepare the filling by drizzling buttered breadcrumbs over the stretched dough, then add the apple filling on top.
Fold the sides of the dough in slightly, then roll it up using parchment paper to help.
Place the strudel seam-side down on a baking sheet, drizzle more butter on top, and dock the surface with openings for steam.
Preheat the oven to 400°F (convection if available) and bake for about 30 minutes, judging by color.
Once baked, let it cool slightly and dust with confectioners sugar before slicing.
