Viennese Apfelstrudel

Cultural Context

Originating in the Austro-Hungarian Empire, Apfelstrudel has become a beloved dessert in Austria and beyond. Traditionally made with thin layers of dough wrapped around a spiced apple filling, it reflects the region's love for pastry and fruit. Today, variations abound, but the classic version remains a staple at festive gatherings and family meals, celebrated for its flaky texture and warm, comforting flavors.

1

Make the dough in a food processor by adding 2 and 3/4 cups of bread flour, 4 tablespoons of very soft unsalted butter, and 1/2 teaspoon of salt.

2

Process the mixture for about 10 seconds to mix the flour with the salt and cut the butter into small pieces.

3

In a separate glass measure, beat 1 egg and add enough water to reach the 1 cup line, then add 1/2 teaspoon of vinegar and stir.

4

With the food processor running, add the liquid to the feed tube until the dough gathers into a ball.

5

Process the dough for 30 seconds, then pull it out and check its texture; it should feel sticky and ropey.

6

Put the dough back in the machine and process for another 30 seconds until silky smooth.

7

Transfer the dough to a bowl with a little oil and let it relax for a couple of hours.

8

Dust a clean tablecloth or bed sheet with flour and place the dough in the center.

9

Brush melted butter on top of the dough and start rolling it out with a rolling pin until it's about 2 feet long and 18 inches wide.

10

Stretch the dough by hand, pulling it gently to make it paper thin, ensuring it hangs over the edges of the table.

11

Cut away the thick edges of the dough and brush it with melted butter.

12

Mix the apples with sugar, cinnamon, and raisins in a bowl.

13

Arrange the apple mixture in a log shape on the dough, then roll the dough over the apples to form the strudel.

14

Tuck the ends of the strudel under and place it seam-side down on a baking sheet brushed with melted butter.

15

Brush the top of the strudel generously with melted butter.

16

Bake in a preheated oven at 450°F for 15 minutes, then reduce the heat to 400°F and bake for another 20-25 minutes until the apples are tender.
