Singaporean Rice

Singaporean Rice, often referred to as Hainanese Chicken Rice, has its roots in Hainan, China, but has become a beloved dish in Singapore. It reflects the multicultural influences of the region, combining Chinese culinary techniques with local flavors. Today, it is a staple in Singaporean cuisine, enjoyed by locals and tourists alike, often served at hawker centers and restaurants.

2 cups rice
4 cups water
1 tsp salt
2-3 tbsp cooking oil
1/2 cup capsicum (julienne cut)
1 cup carrot (julienne cut)
1 cup cabbage (julienne cut)
1/2 tsp white pepper
1/2 tsp chicken powder
1 tbsp red chilli sauce
1 tbsp oyster sauce
1 tbsp soya sauce
1 tbsp tomato ketchup
2 tbsp mayonnaise
1 packet (250 gm) spaghetti (boiled)
2-3 tbsp garlic oil
3-4 garlic (sliced)
2-3 green chillies (julienne cut)
1 tbsp ginger garlic paste
500 gm boneless chicken (small cubes)
1/2 tsp tikka masala
1 tsp coriander powder
1/2 tsp black cumin powder
1/2 tsp turmeric powder
1/2 tsp black pepper
1 tbsp tomato ketchup
1 tbsp red chilli sauce
1 tbsp soya sauce
1 tsp chicken powder
4 tbsp mayonnaise
1/2 tbsp peri peri mild sauce

Boil water, add chicken cube and salt. Mix well.

Add rice and give it a boil. Once it's boiled, drain and set aside.

Take a pot, add cooking oil, cabbage, carrot, and capsicum. Mix it.

Add white pepper, salt, chicken powder, red chilli sauce, oyster sauce, soya sauce, tomato ketchup, and mayonnaise. Stir fry for 1-2 minutes.

Add boiled spaghetti, mix well, and set aside.

Take a pan, add cooking oil, sliced garlic, and green chillies. Fry until golden and set aside.

Take the same pan with garlic oil. Add ginger garlic paste and mix it.

Add chicken. Cook until it changes colour.

Add tikka masala, coriander powder, black cumin powder, turmeric powder, tomato ketchup, red chilli sauce, soya sauce, black pepper, salt, and chicken powder. Cook for 2-3 minutes.

Take a bowl, add mayonnaise and peri peri mild sauce, mix well and set aside.

In a serving dish, spread a layer of boiled rice. Add a second layer of stir fried vegetable noodles, then a third layer of chicken gravy. Add fried garlic, green chillies, and white sauce on top.
