Desiccated coconut is easier to find and store.

Cut fresh coconut into chunks.

Peel and grate fresh ginger root.

In a large saucepan, add 2 litres of water and bring to medium to high heat.

Add 120g of dark brown sugar to the boiling water.

Add 160g of real coconut pieces to the saucepan.

Stir the mixture well.

Add ½ teaspoon of nutmeg and ½ teaspoon of cinnamon powder to the mixture.

Add 1 tablespoon of vanilla bean extract and stir again.

Cook on high until the water has boiled down and the mixture is thick and sticky.

Start dropping spoonfuls of the thick mixture onto a surface to cool and set.

Leave the drops to cool completely before enjoying.
