Start with cleaned thin cut bone-in pork chops.
In a zip bag, add all-purpose flour and sprinkle in Rosemary seasoning salt, mixing well.
Add pork chops to the bag and shake to coat them in the seasoned flour, reserving some flour for later.
Drizzle avocado oil in a skillet over medium heat.
Add the coated pork chops to the skillet and brown them, noting they will not be fully cooked yet.
Remove the browned pork chops and set aside.
In the same skillet, add chopped onions and sauté until browned.
Add salted butter to the skillet and melt it.
Sprinkle in the reserved seasoned flour and stir until it reaches a nice brown color.
Add water to the skillet, increasing the heat to medium-high to thicken the mixture.
Once thickened, add mushrooms, minced garlic, and more seasoned salt to the skillet.
Return the pork chops to the skillet, ensuring they fit; cook until done, about 20 more minutes.
Garnish with chopped parsley before serving.
