In a resealable bag, combine 1/4 cup vegetable oil, 1 tablespoon fish sauce, 1 tablespoon soy sauce, juice of 1 whole lime, 1 tablespoon sugar, 1 small minced shallot, 2 minced garlic cloves, 2 stalks of bruised and chopped lemongrass, and 1 pound pork tenderloin.

Zip the bag and allow to marinate for 2 to 4 hours in the refrigerator.

In a bowl, prepare the pickled vegetables by adding 1 tablespoon fish sauce, juice of 1/2 lime, 1 tablespoon sugar, 1 minced garlic clove, 1/4 cup chopped mint or cilantro, 1-2 minced red chilies, 1/2 cup thinly sliced carrots, and 1/2 cup thinly sliced Daikon radish. Mix everything together and chill until ready to serve.

After marinating, take the pork out of the fridge and discard the marinade.
