Cut the small onion into very thin pieces.

Heat a generous amount of olive oil in a frying pan and add the chopped onion, frying until translucent.

Once the rice is cooked, add cheese to the rice and mix until blended.

Switch off the stove and allow the rice to cool for about 2 hours.

Once cooled, pour the rice into a bowl and refrigerate for about an hour or two.

Prepare the mozzarella by cutting it into rectangular pieces.

Break two eggs into a plate and whisk them.

Oil your hands to prevent the rice from sticking, then mold the rice into a ball around a piece of mozzarella.

Dip the rice ball into the egg, coating it well.
